Otsu Launches in Knoxville, Redefining Asian-Fusion Dining Experience

Otsu Brings a New Twist to Knoxville’s Dining Scene

Knoxville, known for its vibrant culinary scene, just got a little more exciting with the opening of Otsu last week. Co-owned by the dynamic duo Jesse Newmister and Margaret Stolfi, Otsu is housed in the beloved Mill and Mine venue, and it’s offering a fresh take on Asian-fusion cuisine that is sure to delight taste buds across the city.

A Culinary Cousin

While the restaurant shares a family resemblance with the ever-popular Kaizen, the staff at Otsu prefer to think of their new establishment as more of a “cousin.” They want to carve out a unique identity that not only respects the past but also embraces new flavors and experiences. During a recent visit, my dining companion and I were fortunate to sit down with Jesse, Margaret, General Manager Erica Schmidt, and Chef Erin Parrish to learn more about their journey from the pandemic to the launch of Otsu.

The Journey to Otsu

“The concept developed organically,” Jesse explained. After conducting several successful pop-up events, they learned that dumplings were a standout favorite among diners. One such collaboration at Potchke sold out in just ninety minutes! The positive feedback from those events fueled their passion for creating a full-service Asian dining experience.

Margaret noted, “We initially hesitated about having two Asian restaurants in our lineup, worried there might be confusion between the two, but as we delved deeper, it became apparent that Otsu has its own personality.” The conversations among the team revealed a clear vision that led to this exciting new direction.

Spotlight on Chef Erin

Chef Erin Parrish has been a crucial part of the Otsu team, rising through the ranks at Tako Taco. She began as a dishwasher and gradually transitioned to roles involving more cooking, having always shared a love for food since childhood. “Food is life from a very early age,” she said. When approached by Jesse and Margaret for the kitchen leadership role at Otsu, she was more than eager to say yes.

Creating a long-term menu challenged Erin to think differently than with one-off pop-ups. Her goal was to craft dumplings that were not just traditional but also explored flavors that diners might find intriguing. “I want to include vegan options too,” she emphasized, showcasing her commitment to inclusivity in dining experiences.

A Rich Dining Experience

Otsu’s menu features four to five core dumpling options, alongside plant-based dishes and offerings from the Konro Grill, which utilizes high-quality Japanese charcoal. The dumplings and skins are made by hand, signifying the labor-intensive process involved. Jesse emphasized how this dedication ensures consistent quality across all dishes, making every bite a memorable one.

The restaurant currently operates from Wednesday to Saturday and is a labor of love from the staff. Erica Schmidt, the general manager, has been immersed in the service industry for years and finds joy in the collaborative spirit of the team. “We’re all here for the same reason: to make good food and good drinks while having a good time,” she said, perfectly capturing the essence of Otsu’s atmosphere.

Our Otsu Experience

Stepping inside Otsu is like entering a beautifully crafted space that invites you to unwind. With stunning design elements, thanks to Tony Cheatum and his team, the ambience sets a high standard for the dining experience ahead. As we dug into a diverse array of dishes, it was hard not to smile. The Saku Sai Mu, which initially caught our eye due to its gluten-free label, turned out to be a delightful surprise, earning the title of the taste sensation of the night.

As we shared bites of the pork belly, duck enoki, and the sensational Duck and Egg drop soup, it was clear that Otsu offers something for everyone. Jesse and Margaret shared that the Saku Sai Mu has become a beloved choice among diners, further solidifying Otsu’s status as a culinary gem in Knoxville.

Looking Ahead

With plans to introduce daily specials soon and a menu that will evolve over time, the Otsu team is eager to share their passion for Asian-inspired flavors with the community. The restaurant is currently open from 5:00 PM to 10:00 PM, Wednesday through Saturday.
