Knoxville Restaurant Receives Mixed Grades After Health Inspection

During the inspection, which took place on October 10, 2024, the health inspector noted a total of 15 violations at Chef’s Asian Cuisine, ultimately resulting in a passing grade of 71. While a grade of 71 is technically a pass, it’s definitely on the lower end of acceptable scores, especially since grades of 69 and below are considered failing.

Among the significant concerns highlighted in the inspection report were two uncovered containers of cut raw chicken found on the floor beneath the food preparation table. This is a major no-no as it poses a risk for cross-contamination. More troubling was the discovery of various food items also sitting directly on the kitchen floor, including items in the walk-in cooler and freezer. Health regulations require that all foods be kept at least six inches off the floor for proper sanitation.

Additionally, the inspector found soiled wiping clothes left on various counters, which should ideally be kept soaked in a sanitizer bucket to prevent the spread of bacteria. Another finding was several dented cans of food in the dry storage area. Dents, particularly along seam areas, can allow food to spoil and pose a safety risk for diners. The lack of a date marking system was also noted; prepared foods that are kept for more than 24 hours must carry a date of first use—so staff members don’t have to guess when the food was made.

Swift Improvements

Fortunately, the story doesn’t end there. Following the inspection, Chef’s Asian Cuisine took immediate action to address the critical violations pointed out by the health inspector. A follow-up inspection confirmed that all issues had been corrected, and the eatery received a much improved score of 90. This new grade demonstrates the restaurant’s commitment to providing customers with safe and healthy dining options.

It’s important to point out that health inspections for restaurants are conducted every six months and are unannounced. This is done to ensure that the teams running these food establishments are consistently following health regulations, rather than just cleaning up for an inspector’s visit. They can arrange for an inspector to conduct a surprise visit if necessary.
